What each ingredient does

Giblets
Provide the main savory flavor and the chopped meat that finishes the sauce.
Flour
Browns in the roasting fat and thickens the liquid into a smooth gravy.

The step that matters

Stir constantly while adding the cooking water. Adding liquid to browned flour can clump it if not stirred. Constant stirring disperses the starch evenly so the sauce turns smooth rather than lumpy.
