What each ingredient does

Celery
Provides the flavor and, when cooked and strained, the body of the jelly.
Granulated gelatin
Sets the liquid into a firm, sliceable jelly as it cools.

The step that matters

Soften the gelatin before adding it. Gelatin must first absorb cold water so its granules hydrate evenly; added dry or lumpy to hot liquid, it clumps and sets unevenly.
