Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and layer

  1. Butter a pudding dish.

  2. Layer soft bread crumbs and sliced sour apples alternately.

  3. Season each layer with bits of butter, a little coarse sea salt, and ground cinnamon.

  4. Pour ½ cup molasses and ½ cup hot water over the dish.

Bake and serve

  1. Bake at 350°F (175°C) for 30 to 45 minutes until the apples are soft.

  2. Serve with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soft bread crumbs
Form the body of the pudding and soak up the molasses and water as it bakes.
Sliced sour apples
Supply the main fruit flavour and tender, soft texture when baked.
Butter
Adds richness and moisture to the layers as it melts during baking.
Molasses
Adds sweetness and a deep, dark flavour that colours the pudding.

The step that matters

Bake until the apples are soft. Underbaked apples stay firm and starchy inside, while the crumbs may remain dry. The apples need enough heat and time to soften fully and cook into the crumbs.

Flavor stand-ins for the apple

  4. Applethe original

Fit is the average pairing score against bread, butter, cinnamon, molasses, raisin, almond, walnut. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
