What each ingredient does

Milk
Forms the liquid base of the pudding and sets into a soft, creamy custard.
Corn starch
Thickens the milk as it heats, giving the custard its body and smooth texture.
Egg yolks
Add richness and, as they cook, help set the custard firmly.
Sugar
Sweetens the custard and balances the richness of the yolks and milk.
Meringue
Forms a light topping that browns in the oven for contrast in texture and colour.

The step that matters

Cook the custard until smooth. Corn starch must be stirred constantly while heating so it swells evenly and thickens without lumps or scorching on the bottom of the pan.
