Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the main flavor and a soft, pulpy body for the parfait.
Egg whites
Whipped to stiff foam, they lighten the mixture and give it an airy texture.
Egg yolks
Add richness and help give the frozen dessert a smooth, creamy texture.
Heavy cream
Whipped to stiff peaks, it adds fat and a silky, creamy texture.
Sugar
Sweetens the mixture and softens the texture by lowering the freezing point.

The step that matters

Folding in the whipped egg whites and cream. Whipped foams lose air if stirred vigorously, which makes the parfait dense. Fold gently with a spatula, adding the egg whites last, so the trapped air stays in the mixture and the frozen texture stays light.
