Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the sweet potatoes thoroughly.

  2. Boil the sweet potatoes until tender, about 45 minutes to 1 hour.

  3. Peel and cut them in half lengthwise.

  4. Place the halves on a buttered baking sheet and brown in a 400°F (200°C) oven.

  5. For baked sweet potatoes, pierce them with a fork halfway through baking to let steam escape.

  6. For fried sweet potatoes, peel and cut into thin strips, then fry in hot fat until golden brown.
