Rolled Jelly Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix sugar, flour, baking powder, and lemon extract. Add eggs and milk, and stir until smooth.

  3. Pour the batter into a long baking tin and bake until golden.

Roll and cool

  1. While warm, spread jelly or jam over the cake.

  2. Place a towel on the table, lay the cake on it, and roll it up with the towel to prevent cracking.

  3. Do not remove the towel until the cake is completely cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and lift, setting the sponge as they cook.
Flour
Forms the cake's structure once it sets in the oven.
Sugar
Sweetens the cake and helps it brown as it bakes.
Baking powder
Releases gas that makes the batter rise and lighten.
Jelly or jam
Adds sweetness and fruit flavour as the filling inside the roll.

The step that matters

Roll the cake while warm. Warm sponge is flexible, so rolling it with the towel lets it curl without cracking. Once it cools, the structure stiffens and the surface splits easily.

Swap the raspberry

How well each one fits the dish's main ingredients (sugar, flour, egg, milk, lemon):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Raspberrythe original

Fit is the average pairing score against sugar, flour, egg, milk, lemon. Candidates are from the same food group and used in at least 100 recipes.
