Why it works: Allspice and mustard match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 1,928 recipes. Both carry methyleugenol, which smells clove, spice. The science ↓

Pickled Beets

Ingredients

Directions

Cook the beets

  1. Wash the beets carefully, avoiding pricking the skin.

  2. Boil the beets in water for about 1½ hours until done.

  3. Remove the beets, cool, peel, and slice them into ½ inch thick pieces.

Make the pickling liquid

  1. In a pot, combine vinegar, allspice, and whole pepper, and boil for 5 minutes.

  2. Let the mixture cool, then pour it over the sliced beets and cover tightly.

Rest

  1. Allow the pickles to sit for at least a week before using.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beets
Form the main body of the pickle, becoming tender and firm after boiling and slicing.
Vinegar
Provides the acidity that sharpens flavor and keeps the beets tangy and preserved.
Sugar
Balances the sharpness of the vinegar with a touch of sweetness.
Allspice
Adds warm, aromatic spice notes that infuse into the pickling liquid.

The step that matters

Boil the beets until fully done. The beets must be cooked through so they become tender and evenly textured. Undercooked beets stay dense and resist absorbing the vinegar liquid, so the pickle tastes uneven.

Swap the allspice

How well each one fits the dish's main ingredients (vinegar, pepper, sugar, mustard):

  1. Tarragonfits about as well
  2. Allspicethe original
  3. Dillfits about as well
  4. Capersfits less well

Fit is the average pairing score against vinegar, pepper, sugar, mustard. Candidates are from the same food group and used in at least 100 recipes.
