Directions

Make the syrup

  1. Combine water and sugar in a saucepan over medium heat.

  2. Stir until dissolved, then add cream of tartar.

  3. Wipe down the sides of the pan with a damp cloth to remove crystals.

  4. Boil until it reaches the 'crack' stage.

Cool and shape

  1. Pour into shallow greased pans to cool.

  2. Sprinkle lemon extract on top.

  3. When partly cool, mark into squares with a greased knife.

  4. Alternatively, pour onto a greased slab and fold edges toward the center until cool enough to handle.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Provides the sweet, bulk body of the candy once cooked to a syrup.
Cream of tartar
Acidity that helps prevent sugar from crystallizing, keeping the taffy smooth.
Water
Dissolves the sugar so it can be heated evenly into a syrup.

The step that matters

Wipe down the sides of the pan. Sugar crystals clinging to the pan walls can seed crystallization in the syrup, making the taffy grainy. Washing them down with a damp cloth keeps the mixture smooth.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
