Why it works: Allspice and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pickled Beets

Ingredients

Directions

Prepare the beets

  1. Wash the beets carefully, avoiding pricking the skin.

  2. Boil the beets in water for about 1½ hours until nearly done.

  3. Remove the beets, cool them, then peel and slice into ½ inch thick pieces.

Pickle and rest

  1. In a pot, combine enough vinegar to cover the beets with allspice and whole pepper, and boil for 5 minutes.

  2. Once the vinegar mixture is cool, pour it over the beets and seal the container.

  3. Let the pickled beets sit for at least a week before using.

What each ingredient does

Beets
Form the main body of the dish and provide the deep red color and earthy flavor.
Vinegar
Provides acidity that sharpens flavor and helps preserve the beets in the brine.
Allspice
Adds warm, aromatic spice flavor to the pickling liquid.
Whole pepper
Adds aromatic, pungent spice notes that infuse into the vinegar and beets.

The step that matters

Keep the beet skins unbroken while boiling. Pricked beets bleed their red pigment into the cooking water, so they lose color and flavor and the finished pickles look pale. Keeping the skin intact holds the pigment inside until peeling.

Swap the allspice

How well each one fits the dish's main ingredients (vinegar, pepper, sugar):

  1. Cinnamonfits about as well
  2. Tarragonfits about as well
  3. Allspicethe original
  4. Peppermintfits about as well

Fit is the average pairing score against vinegar, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
