What each ingredient does

Split peas
Thicken the broth as they break down during long cooking, giving body and texture.
Mutton
Contributes rich meaty flavour and gelatin from the bones, adding body to the broth.
Onion
Adds sweetness and savoury depth as it softens into the broth.
Carrot
Adds gentle sweetness and aroma to the broth.
Minced ham
Adds salty, smoky meat flavour to the broth.

The step that matters

Passing the soup through a sieve. Straining removes softened split peas and vegetables, so the broth is smooth and the meat is returned cleanly; pressing too hard can force solids through and cloud it.

Swap the peas
