Oyster Mushrooms

Ingredients

Directions

Prepare

  1. Wash and dry the mushrooms, then cut them into strips crosswise of the gills, trimming off the woody portions near the stem.

Stew the mushrooms

  1. In a saucepan, combine the mushrooms with 1 tablespoon of butter and ½ teaspoon of salt. Cover and cook slowly for 20 minutes.

Thicken and finish

  1. In a bowl, moisten 1 tablespoon of flour in ½ cup of milk until smooth, then add another ½ cup of milk.

  2. Add the milk mixture to the mushroom mixture and bring to a boil.

  3. Stir in a grating of nutmeg, a few drops of onion juice, and a dash of pepper. Serve as you would stewed oysters.

What each ingredient does

Oyster mushrooms
Form the main body of the dish and release savory juices as they cook slowly.
Butter
Adds richness and fat that carries flavor through the mushrooms as they stew.
Flour
Starch thickens the milk into a smooth, spoonable sauce when heated.
Milk
Forms the creamy liquid that becomes the sauce around the mushrooms.

The step that matters

Make the flour and milk paste smooth before adding it. Dry flour clumps when it meets liquid. Mixing it fully into a little milk first spreads the starch evenly, so it thickens the sauce without lumps.

Swap the onion
