Asparagus Soup

Ingredients

Directions

  1. Wash and clean the asparagus, then place it in a saucepan with just enough water to cover.

  2. Boil until the tips are soft, then cut them off and set aside.

  3. Fry the onion in the butter, then add it to the saucepan with the asparagus.

  4. Cook until very soft, mashing occasionally to extract all the juice.

  5. Pass the mixture through a sieve.

  6. Blend in the salt, sugar, and flour, stirring constantly.

  7. Gradually add the milk and cream, and serve immediately.
