Cream of Asparagus

Ingredients

Directions

  1. Save the water in which the asparagus has been cooked; make a cream sauce of two tablespoonfuls of butter; two tablespoonfuls of flour, two cupfuls of rich milk and one level teaspoonful of salt ; pu1 the butter into a saucepan and melt ; add the flour and cook together, being careful not to allow it to brown; add the milk cold, stirring constantly until it thickens; then add the water, about one quart; season with salt and pepper, and serve. The tender tips of asparagus may be served in the soup as a garnish.
