Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich the custard, adding richness and help it set when baked.
Bread crumbs
Absorb the hot milk and form the soft body of the pudding.
Egg whites
Whipped into a foam that forms the light, sweet meringue topping.
Powdered sugar
Dissolves easily into the beaten whites, sweetening and stabilizing the meringue.
Milk
Softens the bread and contributes to the custard's set and texture.

The step that matters

Beating the egg whites to stiff peaks. Whites must be beaten until stiff and any trace of yolk or grease must be avoided, because fat prevents the foam from forming and holding air. Sugar added gradually stabilizes the foam so the meringue stays glossy and does not weep.
