Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the choux dough

  1. In a saucepan, combine butter and boiling water; bring to a boil.

  2. Stir in 1½ cups of flour while boiling until well combined.

  3. Let the mixture cool, then add 5 beaten eggs and mix well.

  4. Drop spoonfuls of the mixture onto baking sheets.

  5. Bake for 30 minutes in a 400°F (200°C) oven.

Make the filling

  1. For the filling, boil 1 pint of milk.

  2. In a bowl, beat together 1 cup of sugar, ⅔ cup of flour, and 2 eggs.

  3. Stir this mixture into the boiling milk until thickened.

  4. Let the filling cool partially, then flavor with lemon.

  5. Fill the baked puffs with the lemon‑flavored filling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs add structure and help the dough puff and set as it bakes.
All-purpose flour
Starch in the flour gelatinizes with heat, giving the dough and filling their body.
Butter
Adds fat and richness, tenderizing the dough and helping it brown.
Milk
Forms the liquid base of the filling, adding richness and softness.
Sugar
Adds sweetness to the filling and balances the flavor.

The step that matters

Stirring the flour into the boiling butter and water. The flour must be cooked until the mixture pulls away from the pan and forms a smooth paste. Under-cooked paste makes dough that deflates or stays gummy in the oven.

Swap the lemon

How well each one fits the dish's main ingredients (flour, butter, egg, milk, sugar):
