Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the filling

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, mix 6 egg yolks, 2 cups sugar, salt, milk, and dissolved cornstarch.

  3. Add lemon juice and rind, then pour into a pie crust.

  4. Bake slowly until set, about 30-40 minutes.

Top and finish

  1. For the meringue, beat 2 egg whites until soft peaks form, then gradually add 6 tablespoons powdered sugar.

  2. Spread meringue over the pie and bake until light brown, about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling as they set, giving it a rich, custard-like body.
Cornstarch
Thickens the lemon mixture so the filling sets firm when cooled.
Lemon juice
Adds the tart acidity that balances the sweetness of the filling.
Egg whites
Whipped into a foam that forms the light, airy meringue topping.
White sugar
Sweetens the filling and helps give it a smooth, tender set.

The step that matters

Bake slowly until set. Baking at a low temperature lets the egg-thickened filling set gently. Too much heat can make it weep, curdle, or turn rubbery.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, milk):

  1. Vanillafits better
  2. Figfits about as well
  3. Raisinfits about as well

Fit is the average pairing score against egg, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
