What each ingredient does

Gelatine
Sets the liquid cream so it holds its shape when chilled and unmoulded.
Cold cream
Adds richness and a smooth, creamy texture to the set dessert.
Sugar
Sweetens the coffee and balances its bitterness.
Strong coffee
Provides the main flavour of the dessert.

The step that matters

Stir until the gelatine is fully dissolved. Undissolved gelatine leaves grains or specks in the set cream and can cause uneven setting. Gentle heat over boiling water dissolves it evenly, and the mixture should be removed from heat before the cold cream is added so it stays cool enough to combine smoothly.
