What each ingredient does

Baking soda
Reacts with the acid in the sour milk to produce gas, helping the bread rise and turn light.
Sour milk
Its acidity activates the baking soda and adds moisture and a slight tang.
Molasses
Adds sweetness, moisture, and the dark brown colour typical of this bread.
Graham flour
Provides the main structure of the bread, along with its coarse, wholesome texture.
Cornmeal
Adds body and a grainy texture to the crumb.
