Ingredients

Directions

  1. Boil the peas for 30 minutes if very young, or 45 minutes if fully grown.

  2. Drain the peas through a colander.

  3. Transfer the peas to a dish and add the butter.

  4. If the peas are a little old, add 2 teaspoons of sugar to the boiling water for improved flavor.

What each ingredient does

Green peas
Form the body of the dish, and their natural sweetness is what the sugar enhances.
Butter
Adds fat for richness and a smooth, silky mouthfeel to the peas.
Sugar
Adds sweetness that balances the flavor of older, less sweet peas.

The step that matters

Boiling time for the peas. Pea maturity decides the boiling time. Older peas have tougher skins and starchier interiors, so they need the longer time to become tender. Boiling much longer than needed breaks down the cell structure and leaves the peas mushy.

Swap the peas

How well each one fits the dish's main ingredients (butter, sugar):

  1. Almondfits better
  2. Pecansfits better
  3. Filbertfits better
  4. Peasthe original

Fit is the average pairing score against butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
