Lemon Rice Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pudding

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the boiled rice with the egg yolks, milk, lemon zest, and ½ cup of sugar.

  3. Pour the mixture into a baking dish and bake until set.

Make and brown the meringue

  1. Beat the egg whites until stiff, then gradually add the lemon juice and remaining sugar.

  2. Spread the meringue over the pudding and brown it in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiled rice
Forms the body of the pudding and gives it a soft, substantial texture.
Eggs
Egg yolks help the pudding set, while whipped whites create the light meringue topping.
Milk
Adds moisture and richness, helping the rice mixture bake into a creamy custard.
Sugar
Sweetens the pudding and helps the meringue stay stiff and glossy.
Lemon
Zest adds aroma and juice adds acidity that brightens the sweet custard.

The step that matters

Beat the egg whites until stiff. Whites must be whipped to stiff peaks before sugar is added so the meringue holds its shape and browns evenly. Adding sugar gradually keeps the foam stable and glossy.
