The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Halve and stone the peaches.

  3. Prepare a short crust and line your pie plates with it.

Assemble and bake

  1. Arrange the peaches evenly in the crust.

  2. Sprinkle each pie with 3 tablespoons of white sugar.

  3. Add a few drops of essence of lemon or rose and ½ cup of water.

  4. Cover with the top crust and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit filling, with their sweetness and juice cooking down into the pie.
Short crust
Forms the structure that holds the fruit and bakes into a crisp, golden shell.
White sugar
Sweetens the filling and helps draw out juice from the peaches as they cook.
Water
Adds moisture to the filling, helping it turn saucy as it bakes.
