Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, stir together the lemon juice, grated rind, sugar, and water.

  3. Add the 4 beaten eggs, mixing well.

  4. Pour the mixture into a pie crust and bake until set.

Make the frosting and finish

  1. For the frosting, beat the reserved egg whites to stiff peaks.

  2. Gradually add the powdered sugar while continuing to beat.

  3. Spread the frosting evenly over the pie and return to the oven until slightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the lemon filling as they set, and whites whipped into the frosting give it structure.
White sugar
Sweetens the tart lemon filling and helps balance its acidity.
Lemon juice
Provides the sharp, acidic flavor that defines the pie.
Powdered sugar
Dissolves into the whipped egg whites to make a sweet, stable frosting.

The step that matters

Beating the egg whites to stiff peaks. Whites need to be beaten until they hold firm peaks to create a stable foam. Under-beaten whites will weep or slump, and the frosting will not hold its shape or brown neatly.
