Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the custard

  1. In a saucepan, combine the egg yolks, powdered sugar, and black coffee.

  2. Beat the mixture until light, then stir over medium heat until thick enough to coat the back of a spoon.

  3. Remove from heat and continue beating until cold and thick.

Finish and freeze

  1. Fold in the whipped cream gently.

  2. Transfer the mixture to a mold and pack it in ice and salt for 3 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they cook and set it into a smooth, rich texture.
Powdered sugar
Sweetens the mixture and dissolves easily into the cold yolks.
Black coffee
Provides the main coffee flavour and liquid for the custard.
Whipped cream
Adds air and fat, giving the frozen parfait a light, creamy texture.

The step that matters

Cooking the custard over medium heat. Egg yolks thicken as they warm, but if they get too hot they scramble. Stir steadily and stop once the mixture coats the back of a spoon.
