Baked Apple Dumplings

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure. The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Make a short pie crust and roll it thin.

  2. Cut the crust into squares large enough to cover an apple.

  3. Peel the apples, remove the core, and fill the center with sugar, butter, and a little cinnamon.

  4. Place an apple in the center of each square and fold the crust over carefully to seal in the juices.

  5. Bake in a 350°F (175°C) oven for about 40 minutes.

  6. Brush the tops with beaten egg and dust with sugar, then return to the oven for a few more minutes.

  7. Serve with hard sauce.
