Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Soak the bread crumbs in cold water for 1 hour.

  2. Wring the bread dry in a napkin and add the salt to the crumbs.

Make the custard

  1. Beat the eggs and mix them with the milk.

  2. Add the soaked crumbs to the egg and milk mixture, then mix everything together with a fork.

  3. Pour the mixture into a well-buttered dish.

Bake and serve

  1. Bake at 350°F (175°C) for 1 hour.

  2. Serve with cream if desired.

What each ingredient does

Eggs
Bind the mixture and set it into a tender, sliceable custard as they cook.
Milk
Soaks into the bread and adds moisture, making the pudding soft rather than dry.
Bread crumbs
Form the body of the pudding, absorbing the egg and milk mixture as they soften.
Sugar
Adds sweetness and helps the top brown lightly in the oven.
