Brown Sauce

Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and 34,122 recipes mention both. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Break down and brown to give the gravy sweetness and body.
Lard
Fat that carries heat and helps the onions brown evenly.
Tomatoes
Add acidity and moisture that deepen the sauce's flavor as they cook down.
Meat
Adds savory flavor and richness to the gravy as it cooks slowly.

The step that matters

Browning the onions and tomatoes without frying. Flouring the onions and letting them brown slowly in the hot lard builds color and flavor through browning reactions. Cooking too hot can scorch the flour and turn the sauce bitter, so the heat needs to stay moderate.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (tomato, meat, pepper, parsley):

  2. Carrotbetter flavor fit
  3. Okrabetter flavor fit
  4. Onionthe original

Fit is the average pairing score against tomato, meat, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
