Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the groats

  1. Pick and wash the groats thoroughly.

  2. Soak the groats in cold water for 12 hours.

  3. Drain the water not absorbed and replace it with fresh water.

Bake

  1. Add chopped onions, sage, marjoram, butter (or oil), pepper, and salt.

  2. Bake in a moderate oven at 350°F (175°C) until cooked.

What each ingredient does

Groats
Form the main body of the pudding, swelling and softening as they soak and bake.
Onions
Add savory sweetness and moisture as they cook down into the pudding.
Butter
Adds fat for richness and a softer texture; oil can replace it.

The step that matters

Soaking the groats for 12 hours. Groats are hard and dry, so soaking lets them absorb water before baking. Without it they stay firm and the pudding may not cook evenly.

Swap the onion

How well each one fits the dish's main ingredients (sage, marjoram, butter, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against sage, marjoram, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
