Lemon Cream

Ingredients

Directions

  1. Remove the yellow rind from the lemons, being careful to take only the outer layer.

  2. In a saucepan, boil the lemon rind in the fresh cream.

  3. Squeeze and strain the juice from one lemon.

  4. Mix the strained juice with powdered sugar until fully saturated.

  5. Once the cream is completely cool, stir in the lemon juice mixture, ensuring it does not curdle.

  6. If the mixture is not sweet enough, add more powdered sugar to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the zest and juice that give the cream its citrus aroma and acidity.
Fresh cream
Forms the rich, smooth body of the dish and carries the lemon flavor.
Powdered sugar
Adds sweetness that balances the acidity of the lemon juice.

The step that matters

Stir in the lemon juice once the cream is completely cool. Acidic lemon juice can cause warm dairy to curdle and separate. Letting the cream cool fully before adding the juice helps keep it smooth.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar):

  2. Strawberryfits better
