Why it works: Celery and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Rabbit Mould
Ingredients
Directions
Make the stock
Cook the rabbit slowly in seasoned boiling water until the meat falls from the bone.
Remove the rabbit and concentrate the soup stock to 2 cups.
Strain the stock and skim off the fat.
Set the mould
Decorate the bottom of a mold with parsley and slices of hard cooked eggs.
Soak the gelatin in cold water and add it to the hot liquid.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rabbit
- Provides the meat that is suspended in the set jelly.
- Gelatin
- Sets the stock into a firm, sliceable jelly as it cools.
- Celery
- Adds crisp texture and a fresh, mild flavour against the soft meat.
- Pimento
- Adds mild sweetness and colour to the set mould.
The step that matters
Soak the gelatin in cold water and add it to the hot liquid. Gelatin must first hydrate in cold water so it dissolves evenly into the hot stock. Added dry or to a clumpy mixture, it can leave lumps or fail to set firmly.
Swap the celery
How well each one fits the dish's main ingredients (rabbit, gelatin, parsley, egg):
- Tarragonfits better
- Capersfits better
- Nutmegfits better
- Celerythe original
Fit is the average pairing score against rabbit, gelatin, parsley, egg. Candidates are from the same food group and used in at least 100 recipes.
