Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide the main bulk, sweetness and smooth body of the puree.
Milk
Adds moisture and creaminess, turning the puree silky and rich.
Butter
Adds fat, giving richer flavour and a smoother mouthfeel.
Flour
Thickens the milk mixture so the puree holds its body.

The step that matters

Rub the butter and flour until smooth before adding to the milk. Flour clumps if it meets hot liquid unmixed. Rubbing it with butter coats the starch granules, so they disperse evenly and thicken the milk without lumps.
