An Oven Dinner

Oven, in the book's wordsA very slow oven

Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat your oven to 300°F (150°C).

  2. In a warmed buttered casserole, layer string beans or other fresh vegetables.

  3. Add a layer of sliced potatoes.

  4. Place a hot slice of veal or beef steak on top, seasoned with salt and pepper.

  5. Cover the casserole tightly with an inverted lid.

  6. Cook in the oven for 1 hour.

  7. 20 minutes before serving, drop in dumplings.
