Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main meaty, tender body of the dish.
Butter
Adds richness and flavour to the roux base.
Flour
Thickens the milk into a smooth, stable white sauce.
Milk
Forms the liquid of the sauce, giving it creaminess.

The step that matters

Gradually pour in the milk while stirring. Adding liquid slowly while stirring lets the flour and butter mix evenly, preventing lumps. Once the starch is dispersed, the sauce thickens smoothly as it heats.
