Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the lemon mixture as they set gently over low heat, giving it a rich, creamy body.
Egg whites
Whipped and folded in off the heat, they lighten the cream and give it an airy texture.
Sugar
Sweetens the custard and helps stabilise the beaten egg whites.
Lemon juice
Adds acidity that balances the sweetness and gives the cream its bright flavour.

The step that matters

Cook over low heat without boiling. Egg yolks thicken as they heat, but if the mixture boils they can scramble and curdle, leaving a grainy texture instead of a smooth cream. Constant stirring over low heat keeps it even.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
