What each ingredient does

Coffee
Provides the main coffee flavor and aroma in the brew.
Egg
Its proteins bind to the coffee grounds as they heat, helping them settle and clarify the liquid.

The step that matters

Keep the coffee below a full boil after boiling. Once the egg has bound the grounds, prolonged vigorous boiling can make the coffee bitter and cloudy, so the pot should stay hot without boiling.
