What each ingredient does

Melons
Serve as the hollow shell that holds the filling and the pickling liquid.
Salt
Draws water out of the melons during the brine soak, firming the flesh for pickling.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavour.
Sugar
Balances the sharpness of the vinegar with sweetness.
Cauliflower
Adds bulk and a firm, crisp texture once scalded until tender.

The step that matters

Soaking the melons in the brine. Salt draws water out of the melon flesh through osmosis. Soaking for the full three days firms the fruit so it holds its shape and crispness through pickling instead of turning soft.

Swap the melon
