What each ingredient does

Coarse sea salt
Draws water out of the onions through osmosis, firming them and seasoning them throughout.
Small silver-skinned onions
Provide the main body of the pickle, becoming crisp and mild as they cure.
White vinegar
Supplies the acidity that preserves the onions and gives the pickle its sharp flavour.
Peppercorns
Add sharp, aromatic heat that infuses into the vinegar during boiling.
Mustard seed
Adds a pungent, slightly bitter aroma that flavours the pickling liquid.
Coriander seeds
Contribute a warm, citrusy aroma to the pickling liquid.

The step that matters

Drying the onions before bottling. Any surface moisture left on the onions dilutes the vinegar and can encourage spoilage and cloudiness in the jar, so they should be wiped completely dry before going into the bottles.

Swap the coriander

How well each one fits the dish's main ingredients (onion, vinegar, mustard):

  1. Capersfits better
  2. Garlicfits better
  3. Tarragonfits better
  4. Corianderthe original

Fit is the average pairing score against onion, vinegar, mustard. Candidates are from the same food group and used in at least 100 recipes.
