Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, beat together 3 eggs, 1 cup sugar, 1 cup flour, ½ cup sweet milk, 1 tablespoon butter, and 2 teaspoons baking powder until well combined.

  3. Pour the mixture into two jelly pans.

  4. For the custard, heat 1 pint milk in a saucepan.

  5. In a separate bowl, beat 2 eggs with 1 tablespoon corn starch, then sweeten and flavor with vanilla.

  6. Once the milk is boiling, stir in the egg mixture and cook until thickened.

  7. Let the custard cool, then split the pie crust open with a sharp knife and fill it with the custard.

  8. For the topping, beat egg whites to a stiff froth with 2 tablespoons sugar, spread over the custard, and brown in the oven.
