Yellow Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the egg yolks, sugar, and butter until smooth.

  3. Add the sweet milk and mix well.

  4. Gradually stir in the flour and baking powder until combined.

  5. Flavor the batter with lemon or orange as desired.

Bake and make the filling

  1. Pour the batter into prepared cake pans and bake until golden.

  2. For the lemon filling, combine 1 cup sugar, 2 beaten egg whites, juice, and grated rind of a lemon in a saucepan.

  3. Cook over medium heat until thickened, stirring constantly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and structure, and help the batter bind and set as it bakes.
Sugar
Sweetens the cake and helps the batter turn light and smooth when creamed with butter.
Butter
Adds fat for tender texture and flavor, and helps trap air when creamed.
Flour
Forms the structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.

The step that matters

Cook the lemon filling until thickened. Egg whites thicken when heated, but if the heat is too high or stirring stops, they can scramble. Constant stirring over medium heat keeps the filling smooth and evenly set.
