Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet milk
Provides the creamy dairy base that the sorbet is built on.
Granulated sugar
Sweetens the mixture and keeps the sorbet softer after freezing.
Egg whites
Whipped to stiff peaks, they add airy lightness to the frozen texture.
Ripe peaches
Supply the main peach flavour and fruit puree that gives body and colour.

The step that matters

Beat the egg whites until stiff peaks form. Whites that are under-beaten will not hold air, and folding them into the half-frozen mixture then gives a dense rather than light texture.

Swap the peach

How well each one fits the dish's main ingredients (milk, sugar, egg):

  1. Vanillafits better
  2. Figfits about as well
  3. Raisinfits about as well
  4. Peachthe original

Fit is the average pairing score against milk, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
