Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture as they set during gentle cooking, giving the cream its body.
Egg whites
Whipped with sugar and folded in, they add lightness and airy volume to the cream.
Lemon juice and rind
Provide acidity and bright aroma that cut through the sweetness of the cream.
Sugar
Sweetens the custard and helps stabilise the beaten egg whites.

The step that matters

Cook without boiling. Egg yolks thicken as they heat, but if the mixture boils they can scramble and curdle, leaving a grainy texture instead of a smooth cream. Stirring constantly spreads the heat evenly.
