What each ingredient does

Ground coffee
Provides the main coffee flavour and aroma that the brew extracts.
Egg
Its proteins bind to coffee grounds as they heat, helping them settle out of the liquid.

The step that matters

Keep the coffee just below a boil after boiling. Once boiled, the coffee should be held hot without boiling again, since continued boiling over-extracts bitter compounds and can make the brew harsher.
