What each ingredient does

Coffee sugar
Provides the sweetness and the bulk of the candy, and sets hard as it cools.
Butter
Adds fat for a tender bite and a rich, smooth flavor.
Cream of tartar
Acidifies the syrup, helping prevent crystallization so the candy stays smooth.

The step that matters

Boil without stirring until the mixture snaps in cold water. Sugar syrup must reach the hard-crack stage to set firm. Stirring can trigger sugar crystals that make the candy grainy, and stopping too early leaves it soft and sticky.
