Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Lobster Bisque
Ingredients
Directions
Remove meat from the lobster and finely chop it.
Pound the crackers in a mortar, then add the lobster meat and stock gradually to form a paste; add the remaining stock.
Melt 2 tablespoons of butter with the flour and pour it over the lobster mixture.
Add the seasonings to the scalded milk and combine the mixtures.
Cream 1 tablespoon of butter and add the lobster coral, forced through a strainer, until a smooth paste forms.
Add the coral mixture bit by bit to the hot soup, stirring with a wire whisk.
