Directions

Prepare the liver

  1. Pour hot water over the liver and let it sit for a few minutes to remove blood; then dry it with a cloth.

  4. Remove most of the fat from the pan.

  5. Add butter and flour, mix well.

  6. Add water, salt, and pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Main protein; searing in fat browns its surface while the inside stays tender.
Bacon
Supplies fat for frying the liver and adds salty, savory flavor.
Flour
Dredging coat helps the liver brown, and thickens the gravy.
Butter
Adds richness and fat that combines with flour to start the gravy.

The step that matters

Frying the floured liver. Liver overcooks quickly and turns dry and grainy. Brief, hot frying in bacon fat browns the flour coating while keeping the centre tender.
