Roast Mutton

Ingredients

Directions

Prepare

  1. Trim off any inedible parts of the meat, then wash and dry it with a clean cloth.

  2. Place the meat in a roasting pan and add a little water for initial basting.

Roast

  1. Roast for about 12 minutes per pound in a strong fire.

  2. Do not salt the meat at first to prevent it from hardening.

  3. Salt the meat after it begins to roast well.

  4. If the meat browns too quickly, cover it with a sheet of white paper.

  5. Baste the meat often.

  6. About 15 minutes before it's done, lightly dredge it with flour and baste with butter.

Finish and serve

  1. Skim the gravy.

  2. Thicken the gravy slightly with brown flour.

  3. Serve with currant jelly or another tart sauce.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hind quarter of sheep
Provides the main body of meat that becomes tender and juicy as it roasts.
Butter
Adds fat and richness, helping the outer surface brown and taste savoury.
Flour
Forms a light crust on the surface that browns during the final minutes of roasting.
Currant jelly
Its tartness cuts through the rich, fatty flavour of the roasted meat.

The step that matters

Salting the meat at the right moment. Salting too early can draw moisture out of the surface, and the record advises against it for this reason. Salt added once the meat is roasting well seasons it while the surface is already browning.

Swap the currant
