Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Heat sweet milk to boiling point.

  2. Gradually stir in cold milk mixed with corn starch.

  3. Add sugar, beaten eggs, butter, and nutmeg.

  4. Bring to a boil, then pour into a buttered pudding dish.

Bake and serve

  1. Add stewed prunes and bake at 350°F (175°C) for 15-20 minutes.

  2. Serve with or without sauce; cream enhances the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and add richness and structure as they cook.
Corn starch
Thickens the milk mixture so the pudding holds its shape.
Sweet milk
Forms the liquid base of the custard.
Stewed prunes
Add sweetness, moisture and a fruity flavor to the pudding.

The step that matters

Bring to a boil, then pour into a buttered pudding dish. Cornstarch must reach a boil to fully thicken the milk mixture. Stirring while heating prevents lumps and scorching on the bottom of the pan.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, corn, sugar, egg, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Tarragonfits less well

Fit is the average pairing score against milk, corn, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
