Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Grease the tin plate with butter.

  3. Cover the bottom of the plate with puff pastry.

Assemble

  1. Place 5-6 oysters on the pastry to cover the bottom.

  2. Butter the oysters and season with coarse sea salt and black pepper.

  3. Spread egg wash over the oysters.

  4. Cover with another layer of puff pastry, making small openings with a fork.

Bake

  1. Bake for 15-20 minutes, or until the top is nicely browned.

What each ingredient does

Puff pastry
Forms the flaky top and bottom crust that encloses the oysters.
Oysters
Provide the main filling and a briny, savoury flavour.
Egg
Egg wash gives the top crust an even golden browning.
Butter
Adds richness and helps the oysters and pastry brown and taste rich.

The step that matters

Venting the top crust with a fork. Small openings let steam escape from the filling so the pastry bakes crisp and does not puff unevenly or trap moisture under the top layer.
