Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Adds sweetness and helps balance the salty cure.
Coarse sea salt
Draws out moisture and seasons the meat during the brine cure.
Saltpetre
Helps the meat keep its pink colour during long curing.
Ground cloves
Adds a warm, aromatic spice flavour to the cured tongue.
Lard
Adds fat that keeps the surface moist and helps it brown while baking.

The step that matters

Slow baking under the flour paste. Baking slowly lets the tongue become tender without drying out. The flour paste forms a protective crust that holds in moisture, so basting with lard and hot water keeps the surface from scorching.
