What each ingredient does

Cucumbers
Form the body of the pickle, becoming crisp-tender and absorbing the brine and vinegar flavours.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Vinegar
Acidity that preserves the cucumbers and gives the pickle its sharp flavour.
Alum
Helps the cucumbers stay firm and crisp during pickling.
White mustard seed
Contributes pungent, sharp flavour that carries through the pickling liquid.

The step that matters

Brine stage with the egg test. If the brine is not strong enough to float an egg, it will not draw out enough moisture and salt to firm the cucumbers, so they may turn soft during pickling.

Swap the celery

How well each one fits the dish's main ingredients (cucumber, egg, vinegar, sugar, mustard, clove, cinnamon):

  1. Allspicefits better
  2. Nutmegfits better
  3. Tarragonfits better
  4. Celerythe original

Fit is the average pairing score against cucumber, egg, vinegar, sugar, mustard, clove, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
